I was a vegan for over 5 years before I fully understood the power of calorie density to help you lose weight.  I was eating a ‘mostly healthy’ diet loaded with oils, peanut butter, nuts and seeds, dried fruits, (all very calorie dense) and the occasional processed vegan meat and cheese product.  I wasn’t fully aware that my weight was creeping up until my clothes didn’t fit and I found myself hiding under very flowy dresses everyday.  As someone who has never believed in traditional dieting and restricting yourself to small portions, I knew there had to be a way to eat until you’re full and still be in your ideal, healthy weight range.  Calorie Density and STARCH are the answer.

At 3998 calories per pound, oil is at the top end of the calorie density scale.  Adding oil to your meals increases the calorie density of the meal substantially.

Starch is the secret.  Starch has had such a bad reputation when it comes to health and weight loss… but, starch IS so important because it is what will fill you up with water and fiber.  Starch is low calorie density, but still filling enough to leave you sufficiently satiated.

That’s ok! If you’ve watched a few of my “What I Ate Today” videos on youtube, you’ll see that I don’t follow any complex recipes.  All of my meals are simple, easy to replicate and the ingredients are inexpensive.  Start by choosing 2 breakfasts, 2 lunches and 2 dinners you like and eat those on rotation while you’re learning new meals to add into the mix.

While every body is different (metabolism, genetics, age, amount of weight to lose, etc.) you can expect to lose up to 1 pound of fat per week while following this lower calorie density way of eating.  My suggestion: Don’t be in a rush! If it takes a few months (or even a year), so be it.  Just focus on doing the best job you can at eating starchy, filling, healthy meals and let your body do the work.

I speak a lot about this in my youtube videos.  A few tips: don’t keep any junk food in your house that you would be upset about eating.  “If it’s in your house, it’s in your mouth!”- Chef AJ Also, make sure you’re eating enough food at your mealtimes.  If you’re under-eating and hungry, you’ll be more likely to reach for the rich, calorie-dense junk foods to fill you up.
