This is such an easy and filling meal! And you can get as creative as you like with it – each time you make it, try adding in something different! Mix it up and enjoy!
Ingredients:
- 1 x Large Sweet Potato
- ½ Onion
- ½ Can of Black Beans
- 1 x ripe avocado
- Splash of lemon juice (or squeeze of fresh lemon)
- ½ cup of corn
- Pinch of sea salt (optional)
Instructions
- Rinse the sweet potato, poke some air holes with a fork to let the steam out. Set your oven to 450f and bake it for 45-55 mins, as needed.
- Dice up half an onion and sautee it in a pan on the stovetop with a splash of water (instead of oil) set to medium heat for 5 mins.
- Add in ½ cup frozen corn for another 3-5 minutes.
- Add in half a cup of black beans for 30 seconds (to warm them up)
- In a bowl, mash the entire avocado with a fork and add in the black bean, corn, and onion mixture with a sprinkle of salt (and a splash of lemon juice – optional)
- Slice the baked sweet potato in half down the middle vertically and fill it with the avocado mixture. Enjoy!
