Ingredients
- 1 cup pureed pumpkin (from a can is fine)
- 1 yellow onion
- 4 russet potatoes (peeled)
- 1 tbsp garlic powder
- 2 tbsp soy sauce
Instructions
- Peel and dice the potatoes and onion and boil them in a pot with 8 cups of water for 25-30 minutes until the potatoes are soft.
- In a high powered blender, add the boiled potatoes and onion, pumpkin, soy sauce, and garlic powder and blend until smooth.
- Optional: If you like spice, add a dash of chili powder or cayenne pepper.
Notes
Serve over a rice and veggie dish or use it as a pasta sauce. Store in a glass container with an airtight lid and consume within 7 days.
